Ingredients
1 breasts if chicken
2 onions, sliced lengthwise, ˝” thick
˝ cup balsamic vinegar
For the marinade:
2 tbsp balsamic vinegar
1 tbsp disown mustard
Minced garlic
Salt and pepper
Mix together ingredients for marinade, and marinate chicken in the refrigerator for at least 8 hours. Preheat oven to 350 degrees. In a large sauté pan sear both sides of chicken in a tbsp of olive oil, remove from pan and finish cooking in oven until cooked through. 10 minutes. Using the same pan, add sliced onions, with a hefty pinch of salt. Give all the onions time to brown. Mix up every few minutes. Deglaze with balsamic vinegar and continue cooking until vinegar has reduced by at least half, and onions have absorbed everything it can.
Serve onions over chicken for a great low carbohydrate. Meal!
