1 pork tenderloin
2 links of turkey sausage
6 strips of smoked bacon
Salt and pepper.
Olive oil

Preheat oven to 350 degrees. Using a sharp knife, fan out the tenderloin lengthwise into a flatter piece of meat. placing a strip of plastic wrap over the top pound out until about 1-2 inches thick. Remove the sausage from its casing and press onto the inside face of the open tenderloin, with even distribution. Roll together lengthwise. Wrap with bacon, and place on baking tray, with the seams of the meat down. Bake for around 1 ½ hours until bacon looks crispy. Remove and let rest for at least 10 minutes. Slice and enjoy!
This is super good with cranberry sauce!
